My neighbor always makes a large cookie cake for birthdays. They’ve been enjoyed over and over again by my kids as we have celebrated with her family for years. This year when I asked Henry what type of cake he wanted for his own birthday, he replied “THE COOKIE CAKE!!!” I assumed this would be much harder than it was. I asked my neighbor and was shocked that this is a super easy, shortcut taking, much cheaper cookie cake than I imagined. You can definitely make your own batter, or just buy the refrigerated tubes of dough.
It was also nice to make this the day before our celebration. I used both the “cupcake” icing (which came with decorative tips) and a tube of orange icing (which I already had a set of tips) because it’s Henry’s favorite color. The neighbor always alternates the chocolate and vanilla icing around the edges to make it look more professional so I copied her look.
Overall, we added a candle, sang the song, and Henry was very happy with the results. Plus it was quite delicious and served a lot of people without the need of utensils!
- Half sheet cake pan
- 2 tubes of 30 oz refrigerated chocolate chip cookie dough
- Icing to decorate
- Let tubes of dough sit about 20 minutes on counter to soften.
- Spread dough evenly onto pan.
- Bake at 325 for 25-35 minutes depending on how you like your cookie baked.
- Cool.
- Decorate.
- Serve.
