If you have been in a Kroger over the past few weeks and have NOT noticed the Taste Of Mexico displays, you must have gone in with your eyes closed! Kroger has been celebrating the Taste Of Mexico this month with special events, recipes and tastings within the store. We tried out a few new recipes at home and the first one I’m going to share with you is the Tinga de Pollo = Shredded Chicken in Chipotle-Tomato Sauce. It changed up our normal taco night and everyone liked it. The original recipe calls for the chicken to be served on a tostada, but we opted to fill tortillas instead. I also made Gravity Mom’s Mango Salsa.
Tinga de Pollo – Kroger’s Taste of Mexico
Ingredients
- 1 Rotisserie Chicken
- 2 Cans (10.75 oz.) of Tomato Soup
- 2 cups of Onions, diced
- 4 Chipotle Chiles in Adobo Sauce (canned)
- Flour Tortillas
- Shredded Taco Cheese, Avocado, Cilantro and Sour Cream to Garnish
Instructions
- Preheat pan over medium heat.
- Remove meat from the chicken and shred.
- Puree chilies and tomato soup in a blender or food processor.
- Place onions in skillet. Once translucent, add chicken.
- Add chilies and soup mixture to the pan.
- Stir all ingredients.
- Allow to simmer 10-15 minutes.
- Serve chicken mixture in a tortilla with garnishes.
