Antipasto Skewers

Are you in the need of a new appetizer that will make everyone scream “YUM!”?

An appetizer that isn’t the norm?

I’ve been to a lot of fun summer events this year.  And I’ve eaten a LOT of yummy new appetizers and side dishes.  This one was a hit at a moms-only happy hour hosted by a neighbor.  One of the ladies brought a variation of these Antipasto Skewers and I replicated them with my own spin this past weekend.

Antipasto Skewers are quick and easy to prepare.

I grabbed the following at my local grocery:

  • Bamboo Skewers
  • Mozzarella Balls
  • Tri-Colored Tortellini Pasta
  • One Can of Artichoke Hearts (in veggie aisle; I bought can that said 8-10 small)
  • Pepperoni
  • Cherry Tomatoes
  • Garlic Expressions Vinaigrette (found in produce area of Kroger for sure, see photo below for reference)

I wanted to make about 12 small skewers so Andy cut 6 of the long bamboo skewers in half.  Then I boiled 36 of the colorful tortellini – 3 of each color for every skewer.  (Side note: I cooked leftover tortellini tonight for dinner!)  I drained the artichokes (did not rinse) and actually cut the ends off for a nicer look.  I also grabbed basil leaves from the garden.

Then I just assembled each skewer.  Ok, truth.  I was running late and so Andy assembled the entire thing while I scrambled to get dressed, hair dried, etc.!

I did NOT drizzle the vinaigrette on the skewers until right before serving them.

They were really yummy.  You can keep leftovers in the fridge.  You can also mix up your ingredients.  Add your favorite olives or roasted red peppers or sundried tomatoes.  Whatever you prefer.  Let me know if you try these and how they turn out.  Thanks again to one of my neighbors for the idea!
