Chicken Parmesan

 
This is another so delicious recipe I got from my great neighbor Mod Housewife!  You should definitely follow her for yummy recipes, interior design help, fashion trends, etc.  Here is my version of her Chicken Parmesan recipe.
 
Ingredients:
4 Chicken Breasts
3/4 Cup Olive Oil
Salt
Pepper
2 Cups Bread Crumbs with Italian Seasoning
1/2 Cup Grated or Shredded Parmesan
3 Large Eggs
2 Cups Milk
8 Slices Mozzarella Cheese
Pasta Sauce
Spaghetti
 
Preheat oven to 350.
 
First, you want to pound out the chicken breasts with a mallet to make them thin. Actually, first you want to find someone else to do this! Lucky for me, my brother was in town and he loves to cook. He padded the chicken with a paper towel first to make sure juices wouldn’t go flying and then beat them silly.  Add salt and pepper to your liking.

 
Next, you want to create both your egg wash and crumb mixture.  In one container whisk together the 3 eggs with the 2 cups of milk.  In another container, mix the 2 cups of bread crumbs (if you just have plain bread crumbs in your pantry, add some Italian seasoning…mine were actually already flavored) with the 1/2 cup shredded or grated Parmesan. 
 
Again, find someone else to do the dirty work.  Heat the 3/4 cup oil in a deep skillet on the stove over medium heat.  Now take each chicken breast and dip it into the egg wash first and then into the bread crumb mixture.  Coat well.

 
Our skillet held 2 chicken breasts at a time.  We cooked one batch for 4 minutes on both sides for a golden yellow/brown color.  The second batch we cooked a few minutes longer for a crispier darker brown outside.  Yes, we all have preferences!

 
Once the outside is as dark as you wish (4-8 minutes on each side), it’s time to throw them in the oven.  I used a baking sheet lined with foil and sprayed with some more oil.  Place each cutlet on the baking sheet and top with your favorite pasta sauce and 2 slices of mozzarella cheese.  Bake in the oven for about 15-20 minutes (until chicken completely cooked) and end with 5 minutes under the broiler.

 
Somewhere in there, cook some pasta!  And tah-dah…

 
This will definitely become one of your favorite meals!  Even the kids liked it.  We had leftovers the next day and it was STILL so yummy.  Andy put his extra Chicken Parmesan in a wrap for a sandwich and I had mine over the leftover spaghetti.  We chose to reheat the chicken in foil in the oven so it wouldn’t get too soggy.  It was perfect!
